One of the loading screens humorously mentions a rumor that the Guildmaster was found dead with "your health is low" carved into his forehead. This is a reference to the first Fable, where Weaver would annoyingly utter "Hero, your health is low. Do you have any potions? Or food?" each time the hero's health dipped to critical levels.
Peter Molyneux, while hyping the first Fable's evolving world, memorably promised that acorns could grow into oak trees. However, this didn't happen until Fable II.
Heard from a bandit after the Hero gets killed in combat:
"There's always one that comes back from the dead."

Reaver: Lucien and I had a gentleman's agreement! How dare he try to betray me? And just when I was in the middle of trying to betray you! How inconvenient.
