  1. If you chose the make the black star, you need to fill it like any black soul gem with a soul from a sentient species (human or elf, giants and falmers don't count has black souls) and if you chose to have the white star, It works like a white soul gems for lesser beings (animals and non-human, non-elf enemies).

The white star counts has a grand soul gems so the best white soul to fill it with would be a mammoth's.

Like AlternisDim1996 said, you either need to cast the spell soul trap on the creature you want to use it's soul for and kill it while the spell is still active (60 seconds if used with one hand). You're better off to wait until they're about to die, cast the spell and deal the deathblow. You can also use a weapon enchanted with soul trap, but each hit use the spell charge, so you might want to switch to that weapon when it's time to deal the deathblow again.

  1. Find an enemy and use Soul Trap on it, then kill it within the time limit of the spell.

Or alternatively enchant or find a weapon with the Soul Trap enchantment on it and kill the enemy with that.

You should fill it with that enemies soul
Of course other soul gems in your inventory that are empty may be filled up first

  1. Depends on which version you have, if you have the White Star only animals and other small enemies will fill it, if you have the Black Star you can soul trap human type enemies.

  2. Use souls trap on an enemy and kill it. If it's the black one it has to be a race you can select to play as. If it's the white one, white souls fill the smallest soul gem that can hold their souls, so you need to find something like a mammoth to guarantee fill it (I think the star is the first filled grand soul gem but I don't remember)
