It eventually gets to be big enough to cover about 1/4 of your screen, but it becomes transparent at that size so as not to obscure your view while playing. (As your grip diminishes it becomes visible again.)
There are two ways to increase your stamina/grip gauge:
1. Repeatedly play through the game on the same file. Every time you defeat a colossus your stamina will increase a little more. After five or six playthroughs it will be close to being maxed out.
2. Kill white-tailed lizards and eat their tails. This only provides a very tiny increase, and it isn't even noticeable until you've eaten a lot of them, but it does contribute to increased stamina nonetheless. White-tailed lizards are generally found near the small save shrines scattered around the land and near small outcroppings of rocks/boulders.
