When it was revealed that Mario was illegally placed into the game, the developer responsible told Nintendo of a secret way to attack Bald Bull with body blows. This secret method would go undiscovered for 22 years (aside from the developers, of course) - the method involves timing your attack in conjunction with a light flashing in the audience.
Soda Popinski was originally called 'Vodka Drunkenski' in the old arcade game 'Punch-Out!!' For the NES releases (and beyond), he was changed to 'Soda Popinski' due to racism issues.

Early distributions of Punch-Out! in Japan were done as a prize for the second Famicom Golf Tournament for the NES title "Golf". These versions had gold cartridges and lacked the final battle against Mike Tyson.
The reason Mike Tyson was replaced was not due to the rape allegations against Tyson as some have claimed. The real reason was that Tyson lost his heavyweight champion title to James "Buster" Douglas shortly before his contract expired. In addition, as if thumbing their noses at their biggest rival at the time, Sega had signed a contract with Douglas to appear in his own boxing game, James "Buster" Douglas Knockout Boxing, on the Sega Genesis.
As a result, Tyson's likeness was replaced with the fictional character Mr. Dream.
