Or can I just do whatever for the ones I already S-Ranked?

You have to re-Srank the whole chapter, it's kind of how it works in this genre most of the time. Generally it's considered a wise idea to backup your saveslot before bosses or some of the more dangerous encounters since the game likes so save a lot.

The bigger problem is I keep getting to the end of a chapter and S-Ranking everything but for some reason the optional fight is -

Then you are missing a fight obviously, try checking a guide for all their location. Contrary to popular belief, there are no bugs surrounding this - if it says "-" you probably missed one.

Ah you're right. I just assumed the backup ones weren't registering because I saved, quit and reloaded. But they actually do hide some of them, which I didn't expect from a game of this genre.

But then again I didn't expect them to hide powerups and such either..

There's usually a few ranked fights hidden, Bayonetta, Wonderful 101 and DMC also do this to an extent or in their own way. The genre is full of surprises! If you need any pointers feel free to ask : )

Monsoon is kind of an effer.

He was always the toughest fight but going for the S Rank on Hard (already have it on Easy and Normal), I can totally see that the fight is actually kinda broken.

Sometimes you spam parry against his combos and he still hits you, sometimes you dodge the smoke bomb but it still hits you, sometimes you just take damage for no reason during the giant wheel part, sometimes he throws two helicopters as far apart as possible in as short a time as possible.

But I guess I can't say much. I'm also totally cheating by throwing EM grenades whenever he goes all MC Hammer (Can't Touch This). It's a tactic I didn't use on the other difficulties but he keeps hitting me via bull so

But hey I had a thought. If I beat him with the wooden sword, do I get the 1500 point "No kill" bonus?

They don't count as humanoids, so you can't get the No Kill bonus. To get the No Kill bonus there need to be actual humanoids to fight and you not kill them. Sundowner for example allows this.

Monsoon isn't too hard, you can abuse the Sai for an easy stun and the Pincers wreck him hard. You can manipulate his movement by tapping Blade Mode - this either has him run in circles or do the jump slash. This is called Blade Mode Luring. If you wish you can also just dodge the debris he throws at you.
