I honestly didn't even know Apple still made iPods until someone mentioned one to me today.

From what I can tell, it can do everything an iPad can (internet, games, facetime, music). Is there anything that it can't do which an iPad can do?

Software wise, not much, but iPadOS is different to iOS.
Hardware wise, iPads will sport somewhat more powerful CPUs/GPUs, iPad has cellular models so it doesn't need to tether to an something, Apple Pencil capabilities and it's softwares that accompany it.
