You can have fast start in Chocobo races. I don't know if this is common knowledge or not, but I've searched GameFAQs and I googled around and I haven't found a single piece of information on this. I also haven't seen anyone on YouTube do it. I actually did this by accident the first time and it took me two hours to figure out how to recreate it...

It's really simple. All you have to do is start holding R2 immediately after the number 3 disappears completely. When the race will start, there will be a special animation around you and your Chocobo will start running with a boost.

It was actually second nature for me to do that. I'm used to playing Mario Kart so seeing as how this was a race, I figured that there might be a speed boost, and so there was. Initially I did it when the 2 appeared and got a small boost, but after a couple more races, I found it. If it's not already in the cheats/secrets section, someone should put it there.

Haha, I do this in every racing game thanks to Mario Kart 64. Even when I know there isn't a boost for it.
How can you hope to escape me
When I am already here?

You know what's even better than this, though? The effects of Greens you feed your Chocobo at camps carry over to the races ;)

Pretty much a necessity to beat that cheater Iris.

I swear that greens are the only way to even win a couple of the races.

Technically with a level 10 chocobo it is possible to win every race, aside from Iris' race, without buffs or the quick start, you just have to jump and glide on parts of the track that go down hill as this is faster than running in most parts.
