Baseball: Baseball Stars, Baseball Simulator 1.000.
Still plenty to choose from.

Basketball: Double Dribble, Ultimate Basketball

Boxing: MTPO / Punchout!!

Dodgeball: Super Dodgeball (by default it seems)

Extreme: Slalom, California Games
Launch Ski or Die for awesome intro music.

Football: Tecmo Super Bowl, Tecmo Bowl.

Golf: Golf, NES Open Tournament Golf
I've liked all Golf games on the NES and I've played them all, or at least most of them.

Hockey: Ice Hockey, Blades of Steel

Olympics: Track & Field 1, 2.

Pool: Lunar Pool.
Only one I've played. It's alright.

Soccer: Konami Hyper Soccer, Nintendo World Cup

Soccer RPG: Captain Tsubasa 1, 2.
Two of the best games on the system.

Tennis: Tennis
Only one I've played, still really good though, only that it gets stupid hard on the upper difficulties.

Volleyball: Super Spike V'Ball, Kings of the Beach.
I'll be the first to say that Nintendo Volleyball ain't that bad.

Wrestling: Tecmo World Wrestling, Pro Wrestling.
TWW is heads and shoulders over the rest. M.U.S.C.L.E. is fun and better than any WWF game.
Backlog: Final Fantasy X-2 (100%) (PS2). Last finished: Final Fantasy X-2 (PS2). New Super Mario Bros. Wii (Wii) (100%). Splatterhouse 3 (GEN) (All endings).

I dont enjoy many sports games on the NES anymore, but I can think of a few I still get a kick out of.

Baseball: Baseball Stars. The sequel is good too.
Golf: ummm... Golf. I discovered this one recently. It's very playable and kind of fun.
Volleyball: Super Spike Vball
Soccer: Nintendo World Cup
Hockey: Ice Hockey, but Blades of Steel is right up there.

These other games I can enjoy for a little while before I stop having fun: Tennis, Ring King, California Games, Double Dribble, Karate Champ

Finally, I dont think of racing titles as sports games, but Excite Bike & Ivan Stewart Off Road are enjoyable enough to make my list.

Yeah I didn't mention Golf in my OP but it's a pretty solid game which is surprising considering how bad some of the other black box sports games like 10 Yard Fight and Baseball were.

Basketball Arch Rivals (Despite 30% of the game missing)

Dodgeball- Super Dodgeball (nothing like bludgeoning your opponents to death in a friendly game of dodgeball)
