For example I know that for Castle of Illusion if you play on easy you only play the first few levels, I'm wondering if there are any other games on there that are like this, Thanks

Castlevania: Bloodlines has an extended ending on Expert (which is an unlockable difficulty). It's just one extra screen though.

I thought Konami in general liked to make players play harder difficulties to get the full endings (at least for western audiences, maybe in Japan they were okay with full endings for Normal difficulty).

They did. It was an anti-rental measure.

Dynamite Headdy has an extra boss at the end if you beat the bonus stage 4 times.

The boss is indicative of the company's resentment toward Sega.
