I just built this gaming PC over the weekend.
Specs are:
Ryzen 7 1700X 3.4 GHz 8 Core AM4 Processer
Ryzen B450M Pro4 AM4 mATX Motherboard
Aegis G skill 16 Gb (Two 8 gig sticks) DDR4-3000 Dual Memory kits (RAM)
Seagate BarraCuda 1TB 7200 RPM SATA 3 Hard Drives
Cooler Master Hyper 212 Air Based Cooling Fan
Zotac Gaming GeForce RTX 2060 Dual-Fan 6GB GDDR6 PCIe Graphics card
Corsair CX Series CX750M 750 Watt 80 plus Bronze ATX Modular Power Supply
Corsair Carbide SPEC-04 Tempered Glass ATX Mid-Tower Case with additional RGB enabled Fan
Cooler Master Devastator 3 Gaming Mouse and Keyboard

Running on Windows 10 OS

There’s a bunch of great mmo games I’ve never gotten to play/looking forward to playing. As well as things like modded Skyrim and maybe some Xbox “exclusives” (may try out sunset overdrive)

What kind of games can I play with this build and to what extent can I push the graphics to? I’m usually into rpgs, rts, and pvp focused open world games.

I'd say 1440p with some graphical concessions at 60 FPS for most games.

I have a similar build to yours.

You should as Kartan said, be able to run most games in 1440p, 60 fps with high-ultra settings. Pretty much any big AAA game that you dreamt of playing in 60 fps, can be achieved with the massive upgrade to visuals and resolution. If you want to test it out, you can also try out 4K, but the inconsistent framerate will make it unplayable for too long.

I suggest checking out:
Shadows of the Tomb Raider (this is a good rig test for RTX, HDR, 4K, Hairworks etc.)
Forza Horizon 4
Ori and the Blind Forest

there's also tons of RTS, strategy, MOBA/ MMO games that you can play.

There's also mods, and cheap sales.

I can’t really get into action rpgs like that I got burnt out on POE for the brief time I actually owned an Xbox. I’ll give it a shot if it’s free though

sid meiers colonization 94' for a relaxing game.

warband, some mods slow my computer down like perisno 0.9.

VR skyrim?
No time for games so I twitch. Youtube is good. Two monitors at any one time. My graphics card ist krap.

I strongly recommend getting a small SSD and moving your windows installation (and most played games) to that, you wont regret it.

I wouldn't be bothered about 'pushing' the hardware. I recommend Mount and Blade Warband (when it's on sale at 75% off). I've racked up nearly 2800 hours on that so far, online and offline.
