Something like Kingdoms of Amular: Reckoning might be up your alley then.

It's not the greatest game, but it has a fun combat system and it's a (mostly) vibrant world.

Check out Child of Light. It is a beautiful game and is also extremely fun.

Most colorful 3D games have an anime aesthetic. You seem to be looking for more of a western style though. Ehh. Fable Anniversary maybe? It's old. Really old if you consider the age of the original. But if you mention Neverwinter Nights then i guess that shouldn't bother you. For a more recent game, how about Battle Chasers: Night War? That seems to check most of the boxes you're looking for.

Strong recommendation for Lords of Xulima. It's not a perfect game but one thing they put a lot of effort into was making sure the entire game is colorful and pretty, from the map to the battles to the player portraits.

It's sorta like a hybrid of Baldur's Gate and Might and Magic, an rpg in the older school style.

I recommend Child of Light and Battle Chasers as well.
