I'm looking at 2 gaming laptops in the $1000 range:

I can get the following i5 processer laptop for $800:

https://www.amazon.com/Dell-Inspiron-Display-Gaming-Laptop/dp/B0788BCKZ6/

The other laptop i saw has an i7 processer and i can get it for like $1000:

https://www.amazon.com/Acer-Predator-i7-7700HQ-1060-6GB-G3-571-77QK/dp/B06Y4GZS9C/

Is the Acer Predator i7 worth the extra $200 over the Dell Inspiron i5?

I can get the Dell for $800 at a different store , which isn't the price what Amazon is selling it for.

Would you think double the RAM and an i7 is worth an extra $200?

If you have the money to burn, then sure why not.

Why not look at a custom laptop store that can build to your specs? Check out PCspecialist.com for custom laptop builds.. you can spec processor and ram, and SSD.
