What would I be able to play in high settings with high resolutions and fps?

Inter Core i5 7500
Asus GTX 1060 6GB
Corsair 8GB 2666MHZ

That's pretty dang fantastic. You'll get 60fps at 1080p w/max settings in most games with that. It'll even handle 1440p in less demanding games. Only thing to make it better would be to upgrade to 16gb of Ram when/if prices drop.
