How large should the partition be? I saw one site that said 20gb, but that seems a bit small.

20GB is probably the bare minimum. Under no circumstances would I ever go less than 40GB and that's only if I were literally just installing the OS to test with no plans of ever installing anything but updates. Realistically, give it the whole disk unless you have a good reason not to.

I just want Win 10 to have it's own little space so if in the rare occasion something goes wrong I can just reinstall it without losing anything else.

You don't need a partition for this.

This isn't the days of XP where you have to format every year to prevent the bloat and slowdown. Let it have the whole drive and share it with your games.
