I mean....I love my 4k monitors and the chase to 4k60 is fun. I still don't see a reasonable option to throw away my Fury X yet but I still believe nVidia will bring us the first 4k60 card with the 1080ti.

No, because 4k/120 is not actually available at this time.
2160/60, 1440/144, or 1080/200 is the way to go.

To answer the question, you can basically get away with a mid tier card and be fine nowadays to the extent that 1080p and 60 fps is the goal
