You could play it on an emulator, but emulators and ROMs are in a bit of a gray area, legally. Nothing beats playing it on the original hardware and a CRT though.

No. Piracy is not in a gray area. It's illegal.

Wii is able to output 480p, looks okay on proper HD TVs. Wii U is even able to output Wii software at 1080p (upscaled of course but by Wii U hardware, looks fine)

Emulator can play it at 1080p and 60fps. You can also buy a GameCube controller adapter. The official one works.

The game is likely to be released on the Switch eventually though.

Nvidia Shield and Nintendo Switch are very similar hardware. If they're porting GameCube games, they'll get to Super Mario Sunshine eventually.

I think the Wii U could fairly perfectly emulate GsmeCube yet they never put out GameCube vc games. If they finally do that on the switch though, sunshine would definitely come out.
