Using the Steam version of the game, I found some more information.. for those who like numbers. I don't know if they are the same for the other versions of the game, but I would assume so.

Items that change stats work by multiplying the stat for each item seperately.
Health: + (*1.002) - (*0.998)
Ki and Stamina: + (*1.01) - (*0.99)
Other stats: + (*1.007) - (*0.993)

If, for example, a character has 800 Stamina, and equips two items, both giving 5 to Stamina, the new Stamina would be (800 * (1+ 5 * 0.01) * (1+ 5 * 0.01), 882.
(Also, since it applies them one after another, and multiplying the numbers for positive and negative changes result in less than 1, stats do in fact decrease a bit, even if the amount of arrows cancels out (like, one item giving +2 health, and one taking away 2 health).

Next up, the Stat points from the Boost Attributes option (aka level up points)
Unlike the relative changes from clothes, these add absolute points.
1 point in Health = +10 Health
1 point in Ki/Stamina = +4 Ki/Stamina
1 point in other stat = +0.01 in that stat
(By the way, 100 Ki/Stamina is 1 bar)
The attack strength acts as a multiplies, having twice as much attack means dealing twice as much damage per attack. Also, Basic attacks strengthens the free Ki shots as well.

While I was unable to find anything regarding speed, the Height seemed to add about 5% max health per stage (so, if the shortest is 100%, the tallest is about 115.8%)

The body type also changes things a little bit, as we already knew..
The game groups physical attacks and ki attacks together, so even the normal ki shots (circle button, I bevieve?) are affected when I say Ki in this section.
Physical attacks (so, basic punches and strike supers) will be at 2/3 of their power on a slim character, 5/6 on average build, and 1 on a buff one.
Ki shots are the opposite, having 1 on slim characters, 5/6 on average, and 2/3 on buff characters.

Comparing male and female characters, I looked at the Saiyans, and found that males had about 146.6% of basic attack strength (so, not strike supers, interestingly enough), while females had about 133.3% strength for supers.
Health was about 106% for males, and another value, that could be the buff length (didn't feel like testing it..), was increased by 15% for males. I was unable to find numbers for stamina and ki recovery, so I cannot compare them.

As a little test, I am going to take a level 80 character (400 Stamina), gave it 100 points into Max Stamina (+ 4*100 = 800), and equipped as much +stamina as I could (sadly, I don't have a good +stamina Z-Soul, so I ended up with 4 +5 Stamina items, and one +3 Stamina. That would mean we should have about 800 * (1+ 5 * 0.01)^4 *(1+ 3 * 0.01) = 1001.57715 Stamina. And, what is the value really? 1001.577026, which I'm gonna call a success.

Also, because I was curious.. Kaioken increases all attack stats by 10%, Kaioken x3 by 15%, Kaioken x20 same as x3, so it probably does something else.. I would hope. Super Saiyan only increases stats by about 1%, Super Saiyan 2 by 3%.

To get little idea of what the stats are like, here are the stats of a short, slim, female, unequipped Saiyan, at level 1 and 80:
Health: 181.7 969.2
Ki: 300 400
Stamina: 300 400
Basic Attack: 0.135 0.72
Basic Ki Attack: 0.2025 1.08
Strike Supers: 0.18 0.96
Ki Blast Supers: 0.27 1.44

So yeah. I dunno if this helps anyone, but at least I had fun. If there's anything else I could help with, just tell me.

Interesting, this kind of matching other topics I have seen on Steam, have you had any opinions yet on race stat ranking (which race is best in ki, health, speed, etc) http://www.gamefaqs.com/boards/805627-dragon-ball-xenoverse/71344279

As mentioned before, I dunno about speed, but I can make a list of the other stats real quick.. I'm comparing the values for level 1 characters, I doubt anything changes in the ranking on higher levels. Also, none of these account for the Max Ki / Max Stamina / Low Health changes. Although, because I just found that, Majin only take 75% damage with max Stamina.

Health:
Male Majin (265.8)
Namekian (248.1)
Human Male (229.2)
Human Female (218.3)
Saiyan Male (212.6)
Frieza = Female Majin (195.8)
Female Saiyan (191.3)

Basic Attacks:
Male Saiyan (0.248)
Male Human (0.225)
Frieza (0.221)
Female Human (0.214)
Female Majin (0.207)
Male Majin (0.196)
Namekian (0.191)
Female Saiyan (0.169)

Basic Ki Attacks:
Male Saiyan = Female Human (0.248)
Female Majin (0.221)
Male Human (0.214)
Frieza (0.207)
Male Majin (0.196)
Namekian (0.191)
Female Saiyan (0.169)

Strike Supers:
Male Human (0.248)
Female Saiyan (0.225)
Frieza (0.221)
Female Human (0.214)
Female Majin (0.207)
Male Majin (0.200)
Namekian (0.191)
Male Saiyan (0.169)

Ki Blast Supers:
Female Human (0.248)
Female Saiyan (0.225)
Female Majin (0.221)
Male Human (0.214)
Frieza (0.207)
Male Majin (0.200)

Yeah, this pretty much confirms the list that I posted here: http://www.gamefaqs.com/boards/805627-dragon-ball-xenoverse/71344279

Aside from Male Human and Female human not being equal in health, it's practically the same.
Good to have some numbers in this though, this topic really should be compiled as a sticky, this info is really handy for deciding builds.

I thought Frieza's were the weakest strikers? Good to see that disproven.

I just tested it with attack.
Level 80, no attack: 0.72.
Level 80, 100 in attack: 1.72
Level 80, 100 in attack, 4 piece of equipment with +5 to basic attack: 1.974
So yes, there's no artificial limit there.

As for Super Vegeta, I will make a post about that... once I can actually get the thing to drop :p

The whole stats ranking also shows that males make better melee fighters and female better ki fighters, which is kinda amusing I suppose.

Poor Nameks though, they only shine in Health and even then they're not the top.
