There are FIVE different gang cars:
Convertible Declasse Tornado
Hard-Top Declasse Tornado
Vapid Peyote
Albany Buccaneer
Albany Manana

There are FOUR gangs
Grove Street Families (green/black cars)
Ballas (purple/tan cars)
Vagos (yellow/black cars)
"Unaffiliated gang" (color depends on model)

There are other gang-color vehicles, but no mods on them
Canis Seminole is most common in Families-green

Gang cars can spawn at any time of day in these locations and the model of car that spawns is heavily influenced on what car you are driving.
Gang members may open fire at you if you steal one of their cars, but this isn't always the case. If you steal a gang car while also inside a Gang Attack red circle, the odds they will fight back are much higher.

They are the-gang-not-appearing-in-this-game. "Their" cars don't have the same paint between models (and also have more sophisticated colors). If you go further north in that industrial areas at certain times of day you CAN see groups of people hanging out on the street that will all counter-attack together if you attack one, but their cars don't appear in those locations and there's no known name associated with them.

Do the Kkangpae in Little Seoul have their own customised vehicles (they seem to use the same types of vehicle when they attack your properties in single player)?

What about that Hispanic gang that can be encountered racing in the LS River/Canal at night, I think they're the Marabunta Grande (blue), or possibly the Varrios Los Aztecas (turquoise).

Both of those gangs are also in the game, but do they also spawn their own customised vehicles?

The ones racing at night just seem to spawn muscle cars and sports cars in single player, although the always seems to be a couple of Peyotes near where they race too. I wonder if they're modified in any way.
