The Griffin Strategy scroll resulted in new insights for my pawn Aura and i could share these with two other rented pawns who are also missing the 3rd griffin star. Sadly the star didn't activate but thanks a lot for this precious gift! I have to battle some more griffins it seems. ^_^

Greetings to all & any Arisens still around here. The Darth family have a few TKUs to hand out.

Before that ..., @Manakus , hello again ... Your lady pawn Aura was brought along yesterday for a few RCs & i took the chance of checking her Bestiary.
Regarding Griffin, she already has 3 Stars on Cockatrice. That means she already has all common knowledge between the two foes completed. Hence she is most likely missing the so called "Griffin Lunchboard Trick". Check the following vid (link is also on the Griffin DD Wikia Page - https://dragonsdogma.fandom.com/wiki/Griffin) - it is in JPN, but in-game subs are ENG:

The Griffin DD Wikia Page is also well-written and explains in detail the "Grounding" procedure, needed for Pawn Knowledge. A few tips from me: The Griff is a "Vanilla DD" foe, hence wasn't adjusted for Dark Arisen Weapons. That means it can be killed very fast with BBI Weapons. Disarming the pawns is a solution to that, since the Griff needs to be alive when is grounded, for pawns knowing about it. Also, this knowledge flag is tad difficult to achieve, hence patience is needed. Heavy pawns are recommended to hire, preferably Striders. Also U may need to temp-change Aura to Strider herself. Lastly, the trick probably needs to be performed more than once. If your pawn has all other requirements met on the Griff, including 15 or more kills, the 3rd Star will pop.

Also, Aura is (again, most likely) missing the Hydra Barrel trick, for Hydras & Archydras 3rd Star. Doing the barrel toss "manually" is one of the hardest in-game tricks to achieve, for a pawn' s knowledge, hence the easiest way is the Hydra Encampment fight, in the beginning of the Main Story. The barrel trick involves getting a Hydra head to swallow an explosive barrel, and then succesfully shoot the barrel, in order to decapitate the head.

The point of the Encampment fight is to disarm your pawn-s and prolong the fight long enough, for Mercedes to assist the Arisen by giving him a barrel, and then "summon" your pawn-s close to the Hydra & shoot the barrel, after the Hydra has swallowed it, in order for them to witness. Mind though that pawns don't say anything learned from the encampment fight, regarding Hydra knowledge, and also the trick needs to be perfomed 2 to 3 times, for the pawn's 3rd Hydra (and Archydra) Star to pop. Again, all other knowledge requirements must be met in advance - kill counts e.t.c. Doing the barrel toss "manually", either on the Proving Grounds or on Rotunda of Dredd 1.0 is most likely the hardest pawn knowledge flag in the game to achieve. So, the encampment fight is always the easy way out. Just remember that after the encampent fight, a Checkpoint Save is automatically performed by the game, so the only way to redo the trick (for hired pawns) is to do an "HMR" - Hard Mode Reset - after dismissing them (release & rest). For Aura, U can always try it on your next playthrough, besides trying to do the trick "manually", as explained above. U can also Google "Dragon's Dogma Hydra Barrel Trick", to find more vids or pages with more info.

Some of the other foes she is missing her 3rd Star need high kill-counts - Poisoned Undead, Banshees, Pyre Saurians & Skeleton Brutes - therefore more grinding needed on those.

Also thank you very much for all the insights and helpful hints. Now i can purposefully train her against the griffons for the third star! I know that one time i did the Barrel Trick at BBI. It really isn't that easy to get those damn hydras to swallow the explosiv. Shooting at it is a piece of cake instead. Good to know that i don't have to repeat that technic too much. The next opportunity that i have enough free time i will grind BBI a little bit to advance towards the required numbers.

I won't prevent you for providing me some BBI stuff but it isn't necessary. I really have no problems doing some Daimon runs for BBI Weapon and Armor. Sometimes it's really amusing. Little by little, the bird builds its nest. ;-) Every session my Arisen and Pawn will get a little bit better regarding their equipment. But thank you very much for your suggestion.
