So I wandered into the castle just to see if I could, and after fighting my way all the way to the final room I accidentally triggered the ganon fight. I killed four "blight" ganons and now I'm fighting calamity ganon.

My question is, what does this mean for the rest of the game? I have 7 hearts, no master sword, and I've not been in a single temple. If I kill him right now do I just skip the whole story? If I go to the Divine beasts does it even do anything if ganon is already dead? Is there anything in the game stronger than ganon for me to fight? I feel like if I can take all the bosses one after another and ganon without stopping that there really isn't much hope that anything else can really challenge me here. The lynel I ran into was tougher than some of those bosses I just fought.

No. If you beat him and save, you basically go back to how everything was before you beat him. From what I know, the dialogue for plot doesn't change, and you don't even get an 'ending' if you beat him without plot done or any memories unlocked.

Silver Lynel. Has more HP than Calamity Ganon. Dunno if it's tougher.

Wait

Is it even possible to beat him right from the beginning of the game?

Yep,once you get off of the Great Plateau. It's just very difficult and leads to a very hollow ending. Which is why even the developers insisted against doing it.

You go back to the last save so basically everything is intact.

very hollow ending.

To be honest the "good ending" is not much better.
