...to complete everything this game has to offer without missing anything, what would you guys consider the worst, most annoying stuff to deal with?

The casino, UGH

Adornment hunting, both from having to replay scenarios to choose different dialogue options in areas that have two different adornments based on whether you take more "serious" or "funny" options, and from places where you have to throw Mog over and over and over and over and over and over and over until the game decides to cough them up.

Not to mention the dialog from Archylte Steppe doesn't come back up when you replay that scenario, so you will miss one adornment because of that. Now, that's purely cosmetic but you said "without missing anything."

Some of the monsters in the final story area only spawn once or twice so expect to rerun that scenario several times if you're trying to Catch 'em Allâ„¢.

Materials hunting if you're trying to have all the different upgraded/downgraded versions of equipment.

Monster crystarium items and re-catching monsters that you infuse into other ones, though optimized god tier builds are only needed for some of the DLC fights. If you're not doing those, this part isn't relevant.

There are 2 Adornments in the Arch Steppes (of which you can only chose 1 or the other) which are missable.

The stat bonuses from the Crystarium.

^Those are the only missables in the entire game, due to its time-reset feature.

For the adornment, look up which answer to give to Mog.
For the stat bonuses, use the Crystarium FAQs.

Other than that, everything can be replayed and obtained- literally everything, even the "unique" monsters, which are obtainable again via DLC.

Oof, how did I forget to mention this? In a game that's all about time and being able to revisit things and places, it seems inappropriately permanent to have your stat progression not fixable.

If you are a min-maxer, getting optimal stats for rare monster crystals (e.g. Strength for Chichu) is a nightmare.

I'm not really a fan of that kinda stuff. I always assumed it'd just be pre-set stats with the customization being party based, like the original.

Nope, Serah and Noel's crystarium has just one path with large and small nodes. You choose which job to level for each node you unlock, and the larger nodes give an extra boost to a stat based on what job you chose. It's small per node (+2 to Str or Mag, or +6 to HP) but adds up over time. On the other hand, it's nothing that will stop you from completing the main game.

Monster crystarium is completely different as they don't use CP at all and are locked in a single job. You instead raise theirs with consumable items in four categories, one focusing on each of those three main stats and a fourth called "Potent" that increases all three but generally not as much as the focused stat ones. On top of that, monsters have starting stats in a range instead of a fixed number. But again for main game stuff, this isn't huge.
