I was just wondering which one of these professions would be best for a Shaman (already level 40 so the leather armor isn't needed).

Both professions can make mail armor, but I don't know which makes the better stuff.

Blacksmithing appeals as it also allows you to make weapons, but if leatherworking has better mail armor options I would choose that.

I'm gonna have to say Leatherworking. I've browsed it on Wowhead recently and noticed there were some great stuff for both shammies and hunters.
