I'm unsure as to what sort of "proper way" you're looking for, I'm afraid. You can go into the options menu and switch the targeting mode from Hold to Switch. Doing so lets you press the L (ZL, I get the buttons confused a lot) button to switch between targets, instead of having to hold it down constantly to stay locked onto one. I'll say it again, though: I don't know exactly what it is you're looking for, so I don't know how much this will help.
I can help with the sharks, though. The easiest method of dealing with them is just to ignore them. If you keep sailing, they'll just swim out in front of you and occasionally turn back and attempt to ram the boat. Just jump over them if this happens. If you want to stop and fight them, the boomerang is probably your best bet. It takes two hits to take them out, but it's better than using bombs or arrows in that it will actively track them.
Deliberately changing targets from one to another while in combat, for example while facing multiple knights at a time. I'll have to try toggle instead of hold at some point, I beat the game earlier today.
