And no, I'm not being stupid. So here's the deal. We find out the goddess is Rhea's mother, and that the goddess isn't exactly a divine being, but someone extremely powerful who came from "somewhere far away". This doesn't preclude her from being the central figure of someone's piety, and considered divine due to their awesomeness (awesome in the biblical sense), but Rhea knew her on a personal level. Like imagine unironically saying that you aren't an atheist because you worship your mom. That's dumb. Plus, Sothis is dead, and the entire Church was founded as window dressing for Rhea's ultimate goal of reviving her. By the time the game starts, her motivations may have changed in that she now also supports the followers, but it's hard to believe that she herself believes in the goddess's divinity because of their history together. She may be a follower in the sense that she upholds her mother's ideals (and her own, which is kind of yikes but I won't get into that now), but following someone's beliefs =/= piety.

It’s kind of true. The religion is fake but Rhea does sincerely believe that her mother’s wisdom and power. She really does think of her as the best guide for humanity. I think she really does see her mom as divine being, so she may not believe in her own religion but she totally believes in Sothis and her teachings. So definitely not an atheist more of a pragmatic but sincere believer. It’s kind of like if the pope believes in God but not the teachings of the church. Instead he sees the church as a useful tool to bring back God to the world.

That's the main thing Edelgard gets right: that the church was built on lies and has ulterior motives.

The ulterior motive of bringing back the generous, benevolent divine-like being who gave humans considerably advanced technology or made the lands bountiful, with teachings that encourage doing good and denounce misusing one's power to further one's own ambitions (like Edelgard does, ironically enough)? Yikes, such a devious plan! This monster must be stopped!

Rhea also misused her own influence to further her own ambition. Theres literally a false church about it. Oh and that divine like being thinks shes bats*** crazy to.

Maybe this is a showerthought-while-not-being-in-the-shower, but... If Edelgard is willing to take so many lives for "the greater good", isn't taking a single life to bring back Sothis a less-bloody option of greater good?

Rhe actually did surprisingly little to resurrect Sothis. Around 10 people were used as vessels and that's it (I'm having trouble remembering the scene where it's said so if I could get a link please).
The faith in Sothis existed before the Church was created.

The church of Seiros wouldn't be what it is in game without Rhea purposefully growing it which she did with false pretenses.

Also Sothis still thinks she sketchy as f***.

The world of politics isn't a pretty place, big news. She lied in order to promote an institution that encourages good behaviour. Such a bad person... Given what humans did to her siblings, it's understandable why she didn't want to trust them with that information. And after seeing Edelgard, Rhea was entirely right.

Sothis is biased just like Byleth at the beginning of the game because of Jeralt's warnings. Jeralt who ended up confessing having been too hasty in his judgment. As for Sothis, she eventually helps Rhea break free of her degeneration in SS, so her opinion has changed as well.

If anything Jeralt was just hasty enough. Rhea was doing pretty much exactly what he thought she was doing.
