Im not talking about something like Game of Thrones.

Im asking if theres any good fantasy books involving just one big bad dragon being a threat to everyone.

Obligatory recommendation for The Hobbit, by Tolkien.

Obligatory semi-joking recommendation for the Inheritance Cycle by Paolini.

Obligatory serious recommendation for the Pern books by Anne McCaffery, for massive amounts of dragons all over the place.

Ive read The Hobbit years ago. Great book but its about short little hairy people walking to a mountain basically.

Im looking for a fantasy novel thats pretty much like the Dragonslayer movie.

Ooh....Lawrence Watt Evans has a trilogy named the Obsidian Chronicles. First one is called Dragon Weather. The main guy definitely has a hard on for dragons. It has a lot of elements that reminded me of the Count of Monte Cristo....vaguely. Lol. It's been a while. I remember really liking the first book, and overall the trilogy was pretty good.

Technically Discworlds "Guards! Guards!" would fit your request for a novel with a single big bad dragon. But you might have already read it, and it definitely isn't traditional fantasy. It is, however, brilliant and a ton of fun.
Currently playing: Fire Emblem: Heroes, DB Legends, Tales of Berseria

The Year of Rogue Dragons trilogy by Richard Lee Byers maybe?

It's not just one dragon that's the issue, it's that every dragon in the setting suddenly goes berserk and the protagonists have to find out why.

This also requires the protagonists to put down a whole bushel of dragons throughout the course of the series though.
