Well there's a difference between "The show goes on for as many seasons as it takes" and "We're on until GRRM finishes". TV contracts rarely exceed around 7-8 years, and it's often just a matter of finances if an actor has to leave. Game of Thrones is a massive ensemble show and they won't be able to pay everyone if contracts start expiring.

I do think that 8 seasons will probably be the most the show would last. There's maybe room for one or two more, but I don't think anybody wants to see the show do anime filler for a year or two while the author produces new material (though the common idea of doing a prequel season could be fun).
