Would you have to do three completely separate demos, or would you be able to use the same demo at the three venues?

Totally separate. One wants a Comp Sci lesson, one wants a Geometry lesson, and one wants an Algebra lesson.

I'm curious though. How many "demos" worth of lessons would you have to give in a single normal teaching day?

That's a good way to decide between two jobs, given that all other parts of the job are equal.

Do teaching jobs usually allow for salary negotiations though? If so, having competing offers helps. But I imagine it might be different since a lot of teaching positions are public service jobs.

Well, in this case, my employer technically stays the same - the City of New York is the one that pays me. So it's the same no matter which school I am in.
