At max stats does defense and magic defense still matter?

For Magic Def it never does in the original PS1 release, because due to a bug the equipment bonus is never applied. For Def it won't matter if your base Vit is maxed. The Def% and Mag Def% and any elemental property do matter depending of your needs. The most important thing though, when at max stats, is probably the number of available slots to equip Materia.

However, defence in this game just doesn't matter as much because the damage reduction you get isn't that great.

Does that Magic Def bug still exist in the PS4 version?

You can check that out by looking at the stats screen. Your Mag Def should be the sum of your base Spr and the value of the equipment. On the PS1 version, Mag Def is usually the same value of the Spr stat because the equipment bonus isn't applied.

But I've heard they fixed that in subsequent releases.

Def% contributes to your overall chance of connecting, so equipping things such as Mystiles, and other Def% boosting equipment will contribute to your Deathblow chance, and the Mystile will practically give you a 100% chance of Deathblowing.

It will also make it so that a lot of enemies attacks miss, as Def% also directly contributes to your chance of avoiding an attack, as does Dexterity.

Ofc, the stats cap at 255, so if the base stats are at 255, then the equipment won't add anything to the derived stats. Once maxed the only way to go higher is to use Hero Drinks in battle, you can also move to the back row or apply Sadness for further damage reduction.

If Luck is maxed you're also going to get very high evasion, so Def% won't matter as much, at least not for evasion. I don't know if Luck improves evasion against magic attacks, or if it soley relies on Mag Def% though.

Hit is Attack% and Def% is Evasion. Luck affects both hit, evasion and critical hit rate. I don't know if Def% is used for anything else.

Well, according to the FF Wiki, the Deathblow hits at 1/3 of the accuracy of a normal attack. So if you use it with a weapon that has maximum accuracy, like some of Vincent's weapons, you're guaranteed to land a critical hit.

I don't know how Mystile affects this.
