I remember that there was an option to "unlink" a Nintendo account, after you go into User settings. Are you unable to unlink your Nintendo account now?

No. When the paid online came in they did away with that.

You can, however, link your account to another Switch and switch what your "primary console" is. It also allows you to share games you have attached to your account, allowing users of the secondary console to play the games provided they aren't in use by the primary console.

I'm assuming any kind of account changes has to be done on the actual nintendo website now right?

Nintendo sent out an email not too long before the 6.0 update stating that when 6.0 came around, the option to unlink would go away.

You can call Nintendo and they will unlink it for you
PC and Nintendo Switch

Have they done this on Switch...without leaving the user profile inaccessible? Nintendo Accounts can be linked to multiple systems (unlike the NNIDs of yore), so you wouldn't need to unlink an account to be able to use it on another system.
