If I breed for an egg move, provided it’s done correctly, it’s 100% right? Like the offspring WILL have the move I want, it’s not a “did it work” like searching for perfect IVs? Then, can I breed that offspring and every offspring thereafter will TOO have the move no matter what? Thanks in advance.

Almost. It depends on how many moves you're trying to inherit from the parent Pokemon. As long as you're not trying to pass on more than four egg moves in total, it will work. Otherwise the father's moves will overwrite the baby's natural level 1 moves, and the mother's moves will overwrite the father's.

Just don't forget the move in between generations.

What if I breed for the move and breed the offspring that learned the move, with a Ditto after? The offspring needs to be male? Or does breeding with the Ditto mess it up?

It's fine. As of X/Y, the mother can pass down egg moves too. Ditto won't mess anything up. (In fact, Tyrogue gets egg moves from his evolutions. Their entire line is male-only so you have to breed them via Ditto)

As long as at least one parent has an egg move for the child's species while breeding, the children will have that move (unless it gets overwritten by other inherited moves). The parent's gender doesn't matter, nor does the way the parent learned that move.
Warning: User is known to the state of California to get preachy.
Official - You keep using that word. I do not think it means what you think it means.

Good to know. Noted. Thank you.
